David had his last swim lesson today. He has done a really good job & has learned a lot.
Jim & Meagan showed up today. They are here to surprise Papa & Nana, who will be here tomorrow. It is so nice to see my Brother. We haven't seen each other since Christmas. It was nice to spend some time with Jim & Meagan before everyone else showed up for the weekend.
While the kids took naps, I was able to get some of the food ready for the weekend. I put together the Baked Spaghetti for Friday night & a Cherry Coffee Cake for breakfast. This was the first time I made the Cherry Coffee Cake. It turned out soooo good! I tried a piece before going to bed (I had to make sure it was edible before feeding it to my guests!) :)
You can find the recipe for Baked Spaghetti on 3/12/11.

Cherry Coffee Cake
**This recipe came from the Taste of Home Cake Mix Creations cookbook. It turned out so good & was so easy to make. I will be making this one again!**
1 pkg (18 1/4oz) Yellow cake mix, divided
1 cup all-purpose flour
1 pkg (1/4 oz) active dry yeast
2/3 cup warm water (120-130 degrees)
2 eggs, lightly beaten
1 can (21 oz) cherry pie filling
1/3 cup cold butter
Glaze:
1 cup confectioner's sugar
1 T corn syrup
1-2 T water
In a large bowl, combine 1 1/2 cups cake mix, flour, yeast & water until smooth. Stir in eggs until blended. Transfer to a greased 13-in x 9-in x 2-in baking dish. Gently spoon pie filling over top.
In a small bowl, place remaining cake mix; cut in butter until crumbly. Sprinkle over filling.
Bake at 350 degrees for 35-40 minutes or until lightly browned. Cool on a wire rack. Combine the confectioners' sugar, corn syrup & enough water to achieve desired consistency. Drizzle over cake.
Yield: 12-16 servings.
Some much needed snuggle time (Grace & Aunt Meagan) & wrestle time (David & Uncle Jim)!
